1 bottle of Just Egg
1 garlic clove
1 can diced tomatoes
1-2 cups frozen spinach (or fresh!)
Salt & Pepper
2 cups frozen hashbrowns (optional!)
Mince the garlic clove and drain the can of tomatoes.
On medium heat, add olive oil and then toss in the garlic once oil is hot.
When garlic is slightly cooked, pour in the bottle of Just Egg. Let it cook a bit until there is some consistency of scrambled eggs.
Pour in the rest of the ingredients and mix it together. Do this while the Just Egg is still a bit runny so you don't overcook it.
Add seasons and let it cook until there is almost no water or juices left.

If you are not vegan, you can of course add your own spin to this by adding regular eggs and even some sausage. We are going to try this next time by adding some vegan sausage to it, which sounds extra tasty. We love the italian-ish mood this dish gives off in the mornings. Bon appetite!
