Tofu Curry Scramble

Ingredients:
1 box of firm tofu
1 box of cherry tomatoes
curry seasoning
turmeric seasoning
salt & pepper
Directions:
Slice all the cherry tomatoes in half. Set it aside.
Drain the tofu and then while it's in the box, roughly slice it into cubes/squares.
In a large pan, heat 2 tablespoons of olive oil. When the oil is hot, dump the tofu in the pan.
Use a spatula and break up the tofu until it looks like scrambled eggs.
Sprinkle a generous amount of curry and turmeric over the tofu. Then, a light sprinkle of salt and pepper.
Throw in the cherry tomatoes and sautè them together for a couple minutes.
Bonus Thoughts:
Again, I've always been obsessed with eggs, and all the ways too. Fried egg was my favorite but even scrambled, hard-boiled, omelet, poached, you name it! But after eating vegan for about 3 months, I didn't crave eggs anymore. In fact, the one time I decided to eat eggs at a restaurant was ordering an Eggs Benedict, and I immediately felt really tired and heavy afterwards. It was the strangest thing but I haven't had eggs again since.
We did discover a new vegan egg brand called JUST eggs that is incredible. We found some at YES! Organics and too be honest, I could barely tell the difference. I have no idea who is so damn smart to figure out how to make things look like dairy/animal products but they are legit geniuses.
